The aromatic palette so characteristic of olive oils from the Vallée des Baux-de-Provence ideally emanated from five varietals of olives: the sweet and delicate Grossane, the pungent Béruguette, the subtle and balanced Saloneque, the round and smooth Bouteillan, and the bitter, peppery Picholine. Vallée des Baux-de-Provence AOP extra virgin olive oil, comprising a careful blend of these varietals, is faultlessly balanced and of extremely high quality with deep, rich aromas. It is characterized by a fragrance of freshly cut grass with a hint of artichoke that intermingles with freshness and pungency on the palate.
